If you definitely aren't gonna use the sat nav or bluetooth then go for the ES with leather seats and 18" wheels. Plus maybe the reversing camera. I have an EX with all the above and the sunroof and I wouldn't give up any of the bits...
Personally I much prefer the general dash layout of the EX (the entire layout changes, including buttons etc) so check that out too. Depends how tight your budget is and how many toys you want..
