The dealers I know bulk buy in vast quantities the very cheapest oil that is certified to satisfy the manufacturers requirements. Of course they then sell it for the very most that they can - normally the price of the most expensive oil on the market plus a bit.
It may well be that the cheapest oil they could find was 5W40 - still in spec so quite OK, but not exactly what you would have used yourself.
I always supply my own oil when it comes to a service.
PS A common practice is to use and invoice "synthetic 0W30 oil" and then include a litre of Mobil 1 in the car. The customer assumes he has Mobil 1 in the engine, but of course he hasn't. The dealer is doing nothing wrong - the oil will be in spec, and the invoice is accurate.
PPS I asked my dealer what make oil he used. "It's synthetic." What make I asked? "It's synthetic." What brand oil is it? "It's Honda spec". If you want your dealer to supply the oil, ask to see the drums. They will be huge, with a pump on top, and may be branded.
