To try to get a good colour on a photo, set the white-balance manually on your camera in the car, then all pictures should come out with the correct colours. The only thing you will have to watch is exposure and blur. Try setting your cam to a high ISO setting to reduce blur. The pics may look a little grainy, but they should be OK. I wouldn't recommend a built-in flash photo, as they never look right.
