If I'm applying any of the above by hand, what should I be using? Do any products come with specialist pads or am I okay with a micro-fibre cloth, a lint-free cloth, wife's make up pads, or somethig else?

Also, when removing old waxes etc... at what stage would I use an APC? Before any regular pre-wash / wash, or instead of?

To remove old products use a cleanser, I use Autobrite "Wax off". You can also use washing up liquid in hot waqter. Then go over the bodywork with APC or an IPA wipedown. Then clay, polish, wax/sealant

P1, I use a tri-foam applicator. White side to apply & black to do the final polish stage.

I would use a plush one to buff of the polish residue, but I would not use one to apply it.

Well I have used microfiber cloths for years, (to apply and polish off) never had any problems. however this is my first Honda only had it 6 weeks (2010 car) polished once so far.

I find the small sponge pads better to apply polish etc and microfibre cloths to wipe off. I used to use microfibre all time but polish seems to go better with sponge

How do microfibre application pads stack up against sponge ones, is it a matter of preference or is one type better than another?

Sponge pads are for applying Waxes and Sealers
MF Pads are better when polishing
Dedicated polishing pads like the one Shaum mentions are better
I use Farecla Handpolishing pads. Very good indeed

I've got an AG polishing cloth - any good for using with AGHDW? Can't find my pad - the only alternative is a standard sponge that was given to me as a gift and has never even been out of the packet...

You need a fine sponge otherwise you will marr the paint

Might have to pop down Halfrauds and get a replacement - the sponge in question is probably utterly rubbish which is why I left it in the packet; don't really want to touch the paint with it. Guess the AG cloth is of no use then?

If your off to halfords get some megiuars applicator pads, that'll do ya
