When I'm locking the doors how do I engage the deadbolts?
Is it just pressing the button again?
As I've been doing that... But it just doesn't.... Sound right?
Or is that me just being dense?

(and I have checked the alarm works...)

Secondary...
When I star the car and press the start buttons, the headlights really really dim...
Is this normal?

If not I may nip back to the dealers and tell them to change the battery!

Regarding the first question, yes I think you just press the lock button a second time to deadlock it.

Can't really answer the second question, I always start the engine before switching on other electrics.

Correct, in the manual I think they call it super locking.

No idea on 2nd one.

The lights dimming when starting the engine is normal. The starter motor draws a lot of power.
