Isn't there a trick of turning the brightness fully up, then turn it back 'one click' and the dash doesn't dim ?

Don't forget the dash has 2 different dim settings.

Lights on and lights off. Check both.

You also have options for permanent daylight or auto.

This thread is about the Euro 8G Civic but that dash picture isn't.

Maybe you don't have this feature.

They may be all different by country, but on the UK/Euro Civic there is a control behind the steering wheel

The adjustment is per daytime or nighttime

If you select max clockwise then it stays full brightness regardless so always select one notch down :
